Here it is:
The 'base' is the 10-minute dough. Super easy fool-proof dough that doesnt take much skill or fancy equipment to put together. Very versatile too. Weve made savoury pastries, cheese puffs, pizza, cinnamon twists, etc all with this dough and just a few tweaks.
Dough
- 5 cups flour (can sub one cup with rolled oats, whole wheat flour, etc)
- 2 tbsp instant yeast
- 2 heaping tbsp sugar
- 2 cups warm water
- 1 tsp salt
- 1/2 cup olive oil
- optional: some flaxseed, sesame seed, black seed, etc
1. Mix well with spoon 2 cups flour, warm water, salt, sugar, yeast in bowl. Cover, set aside in warm place for 15 minutes.
2. Mix in olive oil and add remaining 3 cups flour and optional seeds. Can start mixing with spoon and then switch to hand when it gets clumpier. Knead in bowl for 2 minutes. Dont need any fancy kneading techniques. Cover and set aside for a minimum of 10 minutes, then use in whatever way you like.
3. For cheese puffs break off small egg sized pieces of dough. flatten dough into circle with fingers. Add about 1 tbsp cheese mix (1/3 to 2/3 crumbled feta cheese and remaining cream cheese, or mix feta and mozarella cheese, add some flour to cheese to absorb moisture to avoid pastries opening in oven. can mix in seeds or herbs to cheese mix) and close up into a ball again. Bake at 375 for 10-12 minutes until bottom of pastry is golden brown. Can turn on grill to brown the top if needed.
